Cooking Dinner

Emily and I tried a new recipe for dinner tonight. Chicken Spinach Lasagna. It was so good, that I am going to post the recipe. You have got to try it.

10 oz package frozen spinach (thawed and drained)
2 cups cooked chicken
2 cups shredded cheddar cheese
1/3 cup chopped onion
1 Tbsp cornstarch
salt/pepper
1 Tbsp soy sauce
1 can cream of mushroom soup
1 cup sour cream
1 jar sliced mushrooms, drained
1/3 cup mayo
6 lasagna noodles, cooked
1 cup grated Parmasan cheese
1 cup chopped pecans

Combine all ingredients together EXCEPT the Parmesan cheese and the pecans. Place a layer of noodles in a greased lasagna pan. Spread half the spinach mixture over the noodles, then add another layer of noodles and then the remaining mixture. Sprinkle with the Parmesan cheese and the pecans. Bake for 1 hour at 350 degrees.

You have got to try it. We loved it. It was very quick and easy to make. Even with Emily helping!

Cute Boys

Emily went to play with Caleb and Graysen on Tuesday. I don't know which Slusher boy she is going to end up with, they are both very cute boys.

No Picture Today...

Well, today Emily and I had our firt emergency situation. As I was preparing her lunch, she got her index finger stuck in the lid of the parmesan cheese jar. I could not get it out. Todd was at work and I didn't know what else to try...butter was no help! Her little finger was starting to swell and turn a shade of blue. At this point she won't let me look at it. She is holding her hand behind her back saying "ouch, ouch...." Keep in mind that the lid is probably 6 inch in diameter and her finger is stuck in the middle. I call Papa Jack and he is on his way over. Well, I am getting a little nervous now thinking that her finger is going to fall off and I decide to take her to the ER to have them cut it off. So I get her loaded up and are on the way out of the neighborhood and Todd is pulling in, so he turns around and follows us. I then see Papa Jack and he too turns and follows me to the ER. Well, when we get there, Papa Jack has a tool and is able to cute it off. The lid, not the finger! He did this in the parking lot, and of course she is fine. She was extremely brave and didn't cry at all during this mishap. I too was very calm at the time, but thinking back now, going to the ER was probably not the best thing to do, because I doubt she would have lost her finger within the 15 minute time frame! So maybe I was beginning to panic. Thank goodness for papa jack. He saved us from a huge ER bill and we probably would still be setting in the waiting area if we would have went in. Besides that, we had a great day!

Lazy Week

We haven't been up to much this week. Emily went and stayed with Maw Maw Trish and PaPa Jack on Tuesday while I went to the dentist, we went out for dinner one evening and today Caleb and Graysen came to play for a while. We have spent alot of time outdoors because the temperatures are cooler now and Emily is loving her 4 wheeler. She was given a bike this week from our neighbors and she is having fun on that. No exciting plans for the weekend either. Just hanging out being lazy.

No Longer Afraid....

Yesterday, Emily ask to ride her 4 wheeler. She is no longer afraid and rode it again today. She still needs to practice on the steering, but didn't have any crashes.
